Ingredients
1 ½cup(178g)all-purpose flour
1teaspoonbaking powder
½teaspoonkosher salt
1cup(227g)unsalted butter, softened to 65ºF (18ºC)
1cup(198g)granulated sugar
4largeeggs, room temperature
½cup(120ml)sour cream
1 ½teaspoons(7.5ml)vanilla extract
Instructions
Heat the Oven – Set the oven rack to the center position. Preheat to 350ºF (176ºC). Lightly grease a 9×5-inch loaf pan with butter and coat it with flour, tapping out the excess. Alternatively, add a parchment paper sling after greasing to make removal easier.
Mix Dry Ingredients – In a medium bowl, whisk together the flour, baking powder, and salt.
Cream the Butter and Sugar – In a stand mixer fitted with a whisk attachment or hand mixer, beat the softened butter on medium speed for 1 minute. Slowly add the sugar in with the mixer on medium speed, mixing for 30 seconds. Mix at medium speed until light and fluffy, scraping down the bowl halfway through, about 3 minutes.
Incorporate the Eggs – Add the eggs one at a time over medium speed, mixing until incorporated, about 20-second intervals. Scrape down the side of the bowl after each addition.
Add the Sour Cream and Vanilla – Mix in the sour cream and vanilla over medium speed, about 15 seconds. Scrape down the sides of the bowl.
Make the Cake Batter – Add the flour mixture and mix over low speed until just combined, about 10 seconds. Use a spatula to mix in any remaining flour pockets. Do not overmix!
Bake – Pour the batter into the greased pan and smooth the top with a spatula. Bake until the surface is golden brown and a toothpick inserted in the center comes out mostly clean (a few crumbs are okay) or the internal temperature reaches 200 to 205ºF (93 to 96ºC), about 45 to 50 minutes.
Cool – Cool the bread in a pan for 10 minutes. Carefully run a knife or small spatula around the sides of the pan. Use the parchment paper sling, to remove the pound cake and transfer it to a wire cooling rack. Cool completely before slicing.
Notes
Storing: Store in an airtight container for up to 3 days at room temperature or 7 days in the refrigerator. If refrigerated, let it come to room temperature before serving for the best texture and flavor.
Freezing: Once completely cool, wrap the pound cake tightly in plastic wrap or foil and place it in a freezer bag for up to 3 months. To serve, thaw at room temperature or overnight in the fridge. For a fresh-baked taste, slice and warm in the microwave, toaster, or oven, if desired.
