Make the Taco Seasoning Mix - In a small bowl, combine paprika, cumin, salt, pepper, coriander, oregano, garlic powder, onion powder, and chili powder.
Cook the Ground Beef - Heat the vegetable oil in a large skillet over medium-high heat. Add the ground beef and cook, breaking it into small pieces with a spoon, until no longer pink, about 4 to 5 minutes. Stir in the taco seasoning and cook for 1 minute. Taste and add more seasoning as desired.
Warm the Tortillas - Heat a dry skillet over medium heat. Add one tortilla at a time and warm for about 20 to 30 seconds per side, until soft and pliable with a few lightly toasted spots. Keep the warmed tortillas wrapped in a clean kitchen towel to retain heat while warming the remaining tortillas.
To Serve - Serve tacos with warmed tortillas and desired toppings.
Notes
Serving Size: 8 small tacos or 4 large tacos.
For a Thicker Taco Seasoning Sauce: Add 2 tablespoons flour, 1 tablespoon cornstarch, or 1 tablespoon arrowroot powder to the taco seasoning blend. Once the meat is browned, add the seasoning and ¾ cups of water or beef broth, stir and bring to a boil. Reduce heat to a simmer and cook for 5 minutes, stirring occasionally until the sauce thickens.
