Tender, flaky pumpkin scones warmly spiced with cinnamon, nutmeg, and ginger, drizzled with a sweet vanilla glaze that makes them impossible to resist.
Ingredients
Pumpkin Scones
2cups(284g)all-purpose flour
¼cup(50g)granulated sugar, plus more for sprinkling
¼cup(50g)light brown sugar, packed
2 ½teaspoons(8g)baking powder
1teaspoon(2g)ground cinnamon
½teaspoonground ginger
¼teaspoonground nutmeg
¼teaspoonallspice
½teaspoon(3g)kosher salt
½cup(120g)unsalted butter, cold, cut into ¼" pieces
Heat the Oven – Place the oven rack in the middle position. Heat to 400°F (204ºC). Line a sheet pan with parchment paper and set aside.
Combine Dry Ingredients – In a medium bowl, whisk together flour, granulated sugar, brown sugar, baking powder, cinnamon, ginger, nutmeg, allspice, and salt.
Add the Butter – Add the cold butter pieces to the flour mixture. Use a pastry cutter or your fingers to work the butter into the flour until the mixture resembles coarse cornmeal, leaving some pea-sized pieces of butter.
Combine Wet Ingredients – In a medium bowl, whisk together the pumpkin puree, cream, egg, and vanilla.
Make the Dough – Make a well in the dry ingredients and pour in the wet mixture. Fold together until just combined. The dough will be soft and sticky. Turn the dough onto a well-floured surface, sprinkle the top with flour, and lightly knead until smooth, but do not overwork, about 5 to 7 times. Add more flour as needed to prevent sticking.
Portion the Scones – Shape the dough into a round, 1-inch-thick disk, about 8 inches wide. Cut the disc into 8 pie-like pieces. Place scones on the parchment-lined sheet pan. Brush the tops with cream. Sprinkle with granulated sugar. Alternatively, add coarse sanding sugar for crunch.
Bake – Bake until the surface is set and lightly browned, and the bottoms are golden brown, about 13 to 15 minutes. The center should reach about 200ºF (93ºC).
Cool – Allow the scones to cool on the sheet pan for 5 minutes, then transfer to a wire rack.
Make the Pumpkin Glaze – In a medium bowl, whisk together the powdered sugar, cream, pumpkin puree, maple syrup, and cinnamon until smooth. Adjust the consistency with more powdered sugar, maple syrup, or cream as needed.
Glaze the Scones – Drizzle the pumpkin glaze over the scones, or dip to cover the top. Allow to set before serving.
Notes
Using Pumpkin Pie Spice: Add 2 teaspoons of homemade or store-bought pumpkin pie spice instead of cinnamon, ginger, nutmeg, and allspice.
Storing: Store in an airtight container in the refrigerator for up to 5 days. Freeze in a resealable plastic bag for up to 1 month.
Reheating: Microwave in 5- to 10-second intervals until warm.
