Grab & go dark chocolate granola bites are a treat when you need a healthy energy boost throughout the day. Packed with oats, flax, and crunchy crisps.
In a saucepan, heat the honey and brown sugar for 1 minute over medium heat until brown sugar is dissolved. Add vanilla and stir to combine. Add mixture to a mixer fitted with a paddle.
Add peanut butter and ¼ cup chocolate chips and mix over medium speed until combined and chocolate has melted, about 2 minutes.
In a medium-sized bowl combine oats, crisps, flaxseed, and oat bran. Pour into the mixer and combine over medium-low speed, about 1 to 2 minutes.
Using a mini cupcake tin, enough to make 24 cups, add a heaping tablespoon of the dark chocolate granola mixture into each cup. Press down on the mixture firmly. Each cup should be at least ¾ full with the mix.
Refrigerate for at least an hour or until the cups have hardened and are easy to remove with a small knife.
To make the chocolate drizzle, melt ¼ cup of the dark chocolate chips in a double boiler or a small bowl fitted over a pot of simmering water. Stir the chocolate chips until melted and smooth.
Transfer melted chocolate to a small resealable plastic bag, cutting off a small corner of the bag to allow the chocolate to be piped. Drizzle the chocolate over each granola bite. Refrigerate until the chocolate has hardened.

Store bites in an airtight container in the refrigerator for up to 2 weeks.
