I’m not really a fan of maple flavored sausage, will the quality be impacted if I leave it out?

Leaving out the maple shouldn’t impact the quality of your homemade pork sausage. Maple or other sweeteners are primarily for flavor, although a small amount of sugar can contribute to browning and a slightly more tender texture. As long as you have the right fat-to-meat ratio, salt, and mix the sausage well, you should still get great texture without the maple. Alternatives if you want sweetness is honey, or add 1-2 teaspoons sugar or brown sugar. Let me know how it goes!
