If you’re looking for the best pizza stone for a BBQ grill, it may not even be made of stone. Steel pizza stones like this one from Nerd Chef do an amazing job of making pizza crispy, even on the bottom. They’re a bit of a newer trend for making pizzas but have the advantage of being super durable and sturdy.
Since steel can conduct heat better than stone, this option can keep a higher temperature (up to 1,000 degrees F!) for longer than some of the other picks on my list. Things to Consider When Choosing the Best Pizza Stones for Grills
All pizza stones can be used in the oven, but not every pizza stone is ideal for use on a grill. First, make sure the manufacturer of your stone says it’s grill-safe (all of the ones on my list are). Next, you need to consider some other factors, like material, size, shape, and weight.
Material
The most common materials that pizza stones come in are ceramic, cordierite, cast iron, and steel.
- Ceramic: Ceramic pizza stones are made from various types of clay that have been fired in a kiln. It’s relatively lightweight and conducts heat well. Ceramic stones may not be as durable and long-lasting as other types, and may chip or crack over time.
- Cordierite: Most pizza stones are made from cordierite, a mineral that’s better at retaining heat. It’s a type of ceramic but has higher insulation properties than other materials. It’s also more durable. The same material is used for kiln shelves and can easily handle going from a low temperature to a high one without breaking.
- Cast iron: A cast iron pizza stone will have all of the same benefits as a cast iron skillet. It’s strong, long-lasting, and heavy duty. It needs to be seasoned, which is an extra step, and it can be heavy.
- Steel: Steel retains heat well and can produce a crust that is nice and crispy. It’s very durable, but a downside is that it can be even heavier than cast iron. Steel may also need to be seasoned from time to time and tend to be more expensive than other types of pizza stones.
Size
In my research, I found pizza stones of all different sizes, from about 7 inches all the way up to 16 inches. What size pizza you want is up to you, but just make sure to get a stone that’s big enough. You can always make a smaller pizza on a big stone, but you’ll never be able to make a big pizza on a personal-size stone.
Shape
Most pizza stones are either rectangular or circular. I find the rectangular shape to be more versatile since you can either make a larger rectangular pizza or a smaller circular one on it. You’ll want to consider the shape and size of your grill, too — a big gas grill may have room for a rectangular stone, but if you have a small dome-style grill, you may want a circular stone.
Weight
A lot of negative reviews I read about different pizza stones were because the buyer didn’t realize how heavy it would be. The average pizza stone can weigh around 8 or 9 pounds, but one made of steel can weigh more than 15 pounds. If moving or picking up a heavy item is an issue for you, definitely pay attention to the specs of any stone you are interested in.
How to Use Pizza Stone on a Grill
Most pizza stones will need to be preheated before you put the dough on. Preheat the stone, placing it on the grill while both are cold. Putting a cold pizza stone on a hot grill could cause some of the more fragile types to break. The preheat time will depend on what your stone is made of, so follow the manufacturer’s instructions.
Once the grill has reached at least 500℉ and your pizza is made and ready to go, you can use a peel to transfer it onto the heated stone. To make sure your dough doesn’t stick to your surface, you can sprinkle a little cornmeal on it first. Close or cover your grill for the best results. The cooking time will vary depending on how thick your crust is and how many toppings you used, but it should be quick — start checking your pizza after five minutes.
Do You Really Need a Pizza Stone for a Grill?
You don’t actually need to use a stone to cook a pizza on the grill. In fact, you can even put the dough directly on the grates. If you want to try that method, check out my tutorial. It’s not difficult, but some people might find getting the dough right onto the grill a little intimidating.
If you are a beginner at grilling pizza, a stone will take away the fear of quickly having to add the dough to the hot grates. Using a pizza stone is also great for achieving a crisp and chewy crust with even crispness on the bottom.
How to Clean a Pizza Stone for the Grill
The cleaning method will depend on what your pizza stone is made of. Follow the care instructions from the manufacturer for the best results. But in general, you can use a scraper or dry brush on clay or cordierite stones to remove any crumbs or stuck-on pieces. You can also wipe it with a damp cloth but do not use soap. Let it air dry. It’s natural for them to stain over time, so don’t worry if you see discoloration.
Clean a cast iron or steel pizza stone the same way you would other cast iron cooking pans: Hand wash using only a little soap, scraping off any persistent pieces. Rinse, and then dry it thoroughly with a lint-free cloth. Season the pan with a tiny bit of oil, rubbing it into the pan with a paper towel.
