Thanksgiving dinner is really a timing puzzle: one oven, a dozen dishes, and everyone hungry at the same moment. After years of hosting, I’ve learned the secret isn’t cooking faster. It’s cooking earlier. This Thanksgiving game plan spreads the work across the month, so the big day is mostly roasting the turkey, warming the sides, and enjoying your people.

You’ll find a countdown timeline, a turkey thawing calendar, an hour-by-hour Thanksgiving Day schedule built around a single oven, a chart for how much food to make, and my favorite ways to use the leftovers. Every make-ahead time comes straight from my tested recipes, and I’ll explain the science behind each step, so you know why it works.
Thanksgiving Timeline at a Glance
Here’s the whole plan in one place. Dates are for Thanksgiving on Thursday, November 26, 2026.
| When | What to do |
|---|---|
| 4 weeks before (week of Oct 26) | Set the guest list and menu, assign dishes to guests, test any new recipes, order or buy the turkey, check your equipment |
| 1 to 2 weeks before (Nov 12 to 19) | Write the grocery list, shop for pantry items, clear fridge space, freeze rolls or gravy if you like |
| Nov 19 to 22 | Start thawing a frozen turkey in the fridge (see the chart below) |
| 4 to 5 days before (Nov 21 to 22) | Dry the bread for stuffing, make cranberry sauce, gravy, and glazed carrots |
| 2 to 3 days before (Nov 23 to 24) | Make the mashed potatoes, bake the sweet potatoes, prep the green bean casserole |
| 1 day before (Wed, Nov 25) | Dry brine the turkey, assemble the stuffing, bake the pie, set the table |
| Thanksgiving Day | Roast the turkey, then bake and warm the sides while it rests |
4 Weeks Before: Plan the Menu
- Count your guests. Use the how-much-food chart below to figure out turkey size and how many batches of each side to make.
- Choose a make-ahead menu. Lean on sides that hold well in the fridge or freezer. My make-ahead Thanksgiving side dishes list exactly how far ahead each one can be made.
- Assign dishes to guests. If friends and family offer to bring something, give each person a specific dish now, like a salad, a dessert, or drinks, so nothing doubles up.
- Do a trial run of any new recipe. Make it once on a weeknight before the holiday. Keep it to one or two new dishes and let the rest be favorites you know by heart.
- Order or buy the turkey. Frozen turkeys can be bought any time. Fresh turkeys are chilled to about 26ºF (-3.3ºC) and shouldn’t be refrozen, so pick one up just a few days before you roast. Plan on about 1 pound of whole turkey per guest. For a small group, a roast turkey breast is easier.
- Check your equipment. You’ll want a roasting pan with a rack, a reliable meat thermometer, and enough baking dishes for your casseroles. Here are the tools I use every Thanksgiving.
1 to 2 Weeks Before: Shop and Freeze Ahead
- Write the grocery list. Shop for pantry staples, broth, butter, and anything frozen now, and save fresh produce and dairy for the last few days.
- Clear out the fridge. A make-ahead menu needs room. The thawing turkey, the gravy, the cranberry sauce, and the casseroles will all be in there next week, so use up or toss what you don’t need and free up a full shelf for the turkey.
- Bake and freeze the rolls. Homemade Hawaiian rolls freeze for up to 1 month. Rewarm frozen rolls at 300ºF (149ºC) for 15 to 20 minutes.
- Make gravy without drippings. My turkey gravy has a butter and stock option, so you can make it before the turkey is roasted and freeze it.
- Freeze the cranberry sauce. Homemade cranberry sauce freezes for up to 3 months. Thaw it in the fridge the day before.
When to Start Thawing Your Turkey
Thaw a frozen turkey in the refrigerator and allow 1 day for every 4 pounds. If you plan to dry brine on Wednesday, the turkey needs to be fully thawed by Wednesday morning, so count back from there. More tips are in my guide on how to thaw a turkey.
| Turkey size | Days to thaw in the fridge | Start thawing by |
|---|---|---|
| 8 to 12 pounds | 2 to 3 days | Sunday, Nov 22 |
| 12 to 16 pounds | 3 to 4 days | Saturday, Nov 21 |
| 16 to 20 pounds | 4 to 5 days | Friday, Nov 20 |
| 20 to 24 pounds | 5 to 6 days | Thursday, Nov 19 |
Why it works: Your refrigerator stays below 40ºF (4ºC). Bacteria grow fastest between 40 and 140ºF (4 and 60ºC), so a slow, cold thaw keeps the turkey out of that zone the entire time. Never thaw it on the counter. Once thawed, the turkey keeps in the fridge for about 4 days.
4 to 5 Days Before: Start the Make-Ahead Sides
- Dry the bread for the stuffing. Cut and dry the bread cubes for my easy stuffing up to 5 days ahead and store them airtight.
- Make the cranberry sauce (if you didn’t freeze it). It keeps in the fridge for up to 1 week. My slow cooker cranberry sauce keeps just as long.
- Make the gravy. Turkey gravy keeps in the fridge for up to 4 days.
- Make the glazed carrots. Glazed carrots keep for up to 5 days.
Why it works: Dry bread cubes soak up the stock and seasonings without turning mushy. And cranberry sauce actually improves when made early: as it cools, the natural pectin in the berries forms a gel that thickens the sauce.
2 to 3 Days Before: Potatoes and Casseroles
- Make the mashed potatoes. Homemade mashed potatoes keep in the fridge for up to 3 days.
- Bake the sweet potatoes. For sweet potato casserole, bake the potatoes up to 3 days ahead and mix the dry pecan topping up to 2 days ahead.
- Prep the green bean casserole. Refrigerate the cooked green beans and the cooled mushroom sauce separately for up to 5 days. My green bean casserole comes together fast on the day.
- Assemble a dressing or gratin. Southern cornbread dressing and potatoes au gratin can both be assembled up to 2 days before baking.
The Day Before Thanksgiving
- Dry brine the turkey. Season my roast turkey and refrigerate it uncovered on a rack for 12 to 24 hours. Prefer a wet brine? Here’s how to brine a turkey.
- Assemble the stuffing. Combine everything in the baking dish, cover, refrigerate, and bake within 1 day.
- Bake the pie. Pumpkin pie needs about 3 hours to cool and keeps in the fridge for up to 3 days, so Wednesday is perfect. More ideas are in my Thanksgiving pies.
- Move anything frozen to the fridge so it thaws overnight.
- Set the table and write out Thursday’s schedule, including which dish goes in the oven, on the stovetop, or in the slow cooker.
Why it works: Leaving the seasoned turkey uncovered gives the salt time to dissolve and season the meat, while the cold, dry air of the fridge dries the skin’s surface. Less surface moisture means crispier, more golden skin.
Thanksgiving Day Schedule
This sample schedule is for dinner at 4:00 PM with a 12- to 14-pound turkey and my roast turkey method, which roasts at 425ºF (218ºC) for about 1 hour 35 minutes to 1 hour 45 minutes. Eating at a different time? Shift every step by the same amount. For other turkey sizes and methods, see how long to cook a turkey.

| Time | What to do |
|---|---|
| 12:15 PM | Move the oven rack to the lowest position and preheat to 425ºF (218ºC). |
| 12:30 PM | Turkey goes in the oven. Set out an easy appetizer or two so guests can snack while it roasts. |
| 2:05 PM | Start checking the temperature. The turkey is done when the thickest part of the breast reaches 160 to 165ºF (71 to 74ºC) and the thigh reaches 170 to 175ºF (76 to 79ºC). |
| 2:15 PM | Turkey out to rest for about 45 minutes. Green bean casserole goes into the still-hot 425ºF oven until bubbly, about 20 minutes. |
| 2:35 PM | Lower the oven to 350ºF (177ºC). Stuffing goes in covered for 30 minutes, then uncovered until done. Sweet potato casserole goes in with its topping for 25 to 30 minutes. |
| 2:45 PM | On the stovetop: make the gravy from the drippings, or rewarm the make-ahead gravy. Rewarm the mashed potatoes over medium-low heat. |
| 3:00 PM | Carve the turkey. Here’s how to carve a turkey. |
| 3:10 PM | Add the marshmallows to the sweet potato casserole and bake 5 to 10 minutes more. |
| 3:30 PM | Stuffing out. Lower the oven to 300ºF (149ºC) and warm the rolls for 10 to 15 minutes. |
| 3:45 PM | Set out the cranberry sauce, then bring everything to the table. |
| 4:00 PM | Dinner! |
How to Free Up the Oven
The turkey’s rest is your secret weapon. While it rests, the oven is free for the sides. Give every dish a job before the day starts:
- Oven: turkey first, then the casseroles, stuffing, and rolls.
- Stovetop: gravy, mashed potatoes, and glazed carrots.
- Slow cooker: Crock Pot stuffing, Crockpot sweet potato casserole, or slow cooker cranberry sauce, which skip the oven entirely.
- Fridge: cranberry sauce and pie, made days ahead.
Why it works: Resting lets the juices redistribute into the meat, so it stays juicy when you carve. The turkey also keeps cooking as it rests. Pulling the breast at about 160ºF lets carryover cooking bring it to 165ºF.
How Much Food to Make
Plan on about 1 pound of whole turkey per guest, or ½ pound of boneless turkey breast, and about ⅓ cup of gravy per person. For the sides, this chart shows how many batches of each recipe to make, based on each recipe’s yield and one serving of each side per guest.
| Recipe (one batch serves) | 6 guests | 10 guests | 16 guests |
|---|---|---|---|
| Whole turkey (1 lb per guest) | 6 lb (or a 3 lb boneless breast) | 10 lb | 16 lb |
| Turkey gravy (4 cups) | ½ batch | 1 batch | 1½ batches |
| Mashed potatoes (4) | 1½ batches | 2½ batches | 4 batches |
| Easy stuffing (8) | 1 batch | 1½ batches | 2 batches |
| Green bean casserole (8) | 1 batch | 1½ batches | 2 batches |
| Sweet potato casserole (12) | ½ batch | 1 batch | 1½ batches |
| Cranberry sauce (16) | 1 batch | 1 batch | 1 batch |
| Hawaiian rolls (18 rolls) | 1 batch | 1 batch | 1 batch |
| Pumpkin pie (12 slices) | 1 pie | 1 pie | 2 pies |

What to Do With Leftovers
Leftovers are half the fun of hosting. Refrigerate them within 2 hours of serving, enjoy them within 3 to 4 days, and reheat them to 165ºF (74ºC). Keep a few containers on hand to send guests home with a plate, too. Here are my favorite ways to use what’s left:
- Turkey cranberry sliders: leftover turkey and cranberry sauce on buttery rolls with melty cheese.
- Turkey enchiladas: a flavor-packed dinner that gives shredded turkey new life.
- Turkey noodle soup: a big, comforting pot for the cold days after the holiday.
- Turkey jook: our family’s post-holiday tradition, a savory rice porridge made from the turkey carcass.
- Homemade turkey stock: roast the leftover bones first for a deeper, more golden stock.
What If…? Thanksgiving Troubleshooting
The turkey is still frozen
Switch to the cold water method. Submerge the wrapped turkey in cold water, change the water every 30 minutes, and allow about 30 minutes per pound. A 16- to 20-pound turkey can take 8 to 10 hours. Roast it as soon as it’s thawed.
You have no pan drippings for gravy
Make it with butter and stock instead. My turkey gravy includes the swap: ½ cup unsalted butter and 4 cups turkey or chicken stock. If a make-ahead gravy thickens in the fridge, rewarm it with a splash of stock.
You run out of oven space
Move a side or two to the slow cooker. My make-ahead Thanksgiving sides include three slow cooker recipes that never touch the oven, and the warm setting keeps them ready until dinner.
You’re cooking for a small group
Roast a turkey breast instead of a whole bird. Plan on about ½ pound of boneless breast per person. My roast turkey breast starts at 450ºF (232ºC) for 30 minutes, then finishes at 325ºF (163ºC), about 1 to 1¼ hours total for a 4-pound boneless breast.
You want to stuff the turkey
I bake my stuffing in a separate dish. The stuffing in the center of the bird must reach 165ºF (74ºC) to be safe, and by the time it gets there, the turkey meat can overcook.
Dinner runs long
Keep hot foods at 140ºF (60ºC) or warmer, and don’t leave perishable food out for more than 2 hours. Refrigerate leftovers within 2 hours, enjoy them within 3 to 4 days, and reheat them to 165ºF (74ºC). My holiday food safety tips cover the rest.
Frequently Asked Questions
About 4 weeks ahead. That gives you time to set the menu, order a turkey, and freeze a few dishes, so the last week is mostly fresh prep and the day itself is mostly cooking and reheating.
Allow 1 day in the refrigerator for every 4 pounds. For Thanksgiving on November 26, 2026, start a 12- to 16-pound turkey by Saturday, November 21, so it’s thawed in time to dry brine on Wednesday.
Plan on about 1 pound of whole turkey per guest, or ½ pound of boneless turkey breast per person.
Dry brine the turkey, assemble the stuffing, bake the pie, and finish any sides that are best made a day ahead. Cranberry sauce, gravy, mashed potatoes, and glazed carrots can be made even earlier.
Rest a whole roast turkey for about 45 minutes. Use that time to bake the casseroles and stuffing, make the gravy, and rewarm the potatoes.
Keep hot foods at 140ºF (60ºC) or warmer. Cover dishes with foil, hold slow cooker sides on the warm setting, and serve within 2 hours.
